The Sumire Journey

The Sumire Journey by GOHO Kaiseki & Cocktail Bar is a 9-course, 13 dishes meal that kicks off with GOHO's take on the classic Monaka.

Here, the traditional red bean paste is replaced with an Ankimo Paté that is topped with Sweet Pickled Japanese Strawberries and Myoga (Japanese Ginger) to balance the smooth and rich paté with a hint of crunch and acid.

Adding to the Yakimono course of the Sumire menu is a clever take on a traditional Tsukune usually made with Chicken and served with a raw chicken egg yolk on the side.

For GOHO’s rendition, think Japanese Scotch Egg as here you’ll find a poached Quail Egg with a jammy yolk encased in Duck meat glazed and grilled over bincho.
