The Sumire Journey for 2 by GOHO Kaiseki & Cocktail Bar is a 9-course, 13 dishes meal that kicks off with GOHO's take on the classic Monaka.

Here, the traditional red bean paste is replaced with an Ankimo Paté with a hint of crunch and acid.

Adding to the Yakimono course of the Sumire menu is a clever take on a traditional Tsukune usually made with Chicken and served with a raw chicken egg yolk on the side.

For GOHO’s rendition, think Japanese Scotch Egg as here you’ll find a poached Quail Egg with a jammy yolk encased in Duck meat glazed and grilled over bincho.
